St. Charles casino opens fast-casual Mexican restaurant

Ameristar Casino Resort Spa St. Charles last week opened The Salted Lime, a fast-casual concept serving Mexican cuisine.

ST CHARLES, Mo. — Ameristar Casino Resort Spa St. Charles last week opened The Salted Lime, a fast-casual concept serving Mexican cuisine.

In tandem with the restaurant’s opening, Ameristar launched a QR code ordering platform that allows guests at the resort to order food at all its restaurants from anywhere on the property and then pick up their order once ready.

The new restaurant replaced Pearl’s Oyster Bar, which closed about four months ago after operating at the resort for 21 years.

Ameristar sought to add a lower-cost restaurant concept that offered quicker service, was more to-go friendly and appealed to a wide variety of customers.

The Salted Lime serves a variety of Mexican favorites, including street tacos, build-your-own burritos, chimichangas and pork carnitas made with citrus- and cola-braised pork. It also has an extensive margarita list, as well as desserts like churro cheesecake and tres leches cake.
