ELLISVILLE, Mo. — Barbecue joint Salt + Smoke on Friday opened its newest location in Ellisville.
It’s been nearly three years since the local chain last opened a new restaurant with its Ballpark Village location, and owner Tom Schmidt says that won’t be the case again: “Our foot is back on the gas, and we’re not taking it off. There’s going to be a lot of fun stuff coming out over the coming weeks, months and years.”
The company’s new West County location, at 1386 Clarkson/Clayton Shopping Center, was in development for about a year, during which time the space, which previously housed a Walnut Grill restaurant, was “completely gutted… down to the studs and then rebuilt,” Schmidt said.
It’s now “the perfect version of what we think a Salt + Smoke needed to be here,” he said. The nearly 7,000-square-foot restaurant seats about 330 guests inside, with room for roughly 150 more on its wrap-around outdoor patio.
