2 St. Louis-based restaurant chains expand to Metro East development

The company on Friday opened the third location of Kimchi Guys, and it will open a third location of Drunken Fish on Aug. 3.

EDWARDSVILLE, Ill. — Munsok So’s expansion plans for So Hospitality Group are moving forward.

The company on Friday opened the third location of Korean fried chicken restaurant Kimchi Guys, and it will open a third location of Drunken Fish, a sushi and Japanese dining spot, on Aug. 3.

Both restaurants, which were announced in March 2022, are located at 6151 Trace Parkway Drive in Edwardsville, with Kimchi Guys in Suite B and Drunken Fish in Suite A.

Kimchi Guys’ Edwardsville location is about 2,000 square feet and seats about 50 guests, So said. The fast-casual restaurant — known for its variety of kimchi, Korean twice-fried chicken, rice bowls — employs about 20 workers, So said.

Drunken Fish’s 4,000-square-foot Edwardsville location will employ about 50 works once open, So said. The restaurant — offering Japanese dishes including sushi, sashimi and tempura — will seat about 250 diners, including on its outdoor patio, he said.
